- 1 lb elbow macaroni or cavatappi
- 3 tbsp butter
- 3 tbsp flour
- 2 1/2 cups whole milk
- 1/2 cup heavy cream
- 2 1/2 cups sharp cheddar, shredded
- 1 cup Gruyère, shredded
- 1 tsp Dijon mustard
- 1/2 tsp garlic powder
- Pinch cayenne or nutmeg
Steps
- Boil the pasta in salted water 1 minute short of the package time. Drain.
- Melt the butter in the same pot, whisk in the flour and cook 1 minute. Slowly whisk in the milk and cream; simmer 3 minutes until slightly thickened.
- Off the heat, stir in the cheeses a handful at a time until smooth. Add mustard, garlic powder, cayenne and salt.
- Fold in the pasta and let it sit 2 minutes to thicken. Serve at once.
