Stovetop Mac and Cheese

Extra-creamy mac and cheese made entirely on the stove with a sharp cheddar and Gruyère sauce. Twenty minutes and no roux anxiety.

Ingredients (10)

  • 1 lb elbow macaroni or cavatappi
  • 3 tbsp butter
  • 3 tbsp flour
  • 2 1/2 cups whole milk
  • 1/2 cup heavy cream
  • 2 1/2 cups sharp cheddar, shredded
  • 1 cup Gruyère, shredded
  • 1 tsp Dijon mustard
  • 1/2 tsp garlic powder
  • Pinch cayenne or nutmeg

Steps

  1. Boil the pasta in salted water 1 minute short of the package time. Drain.
  2. Melt the butter in the same pot, whisk in the flour and cook 1 minute. Slowly whisk in the milk and cream; simmer 3 minutes until slightly thickened.
  3. Off the heat, stir in the cheeses a handful at a time until smooth. Add mustard, garlic powder, cayenne and salt.
  4. Fold in the pasta and let it sit 2 minutes to thicken. Serve at once.
