Classic Smash Burgers

Thin beef patties smashed onto a screaming-hot griddle for maximum crust, with melted American cheese, pickles and a tangy burger sauce on soft buns.

Ingredients (10)

  • 1 1/2 lb 80/20 ground beef
  • 8 slices American cheese
  • 4 potato or brioche buns
  • 1/2 cup mayonnaise
  • 2 tbsp ketchup
  • 1 tbsp yellow mustard
  • 2 tbsp dill pickle, minced, plus slices
  • 1 onion, very thinly sliced
  • Lettuce and tomato as you like
  • 1 tbsp butter

Steps

  1. Mix the mayo, ketchup, mustard and minced pickle for the sauce.
  2. Divide the beef into 8 loose balls without compressing. Season the outside with salt and pepper.
  3. Heat a cast-iron skillet or griddle until smoking. Butter and toast the buns; set aside.
  4. Place 2 balls in the pan and smash flat with a spatula for 10 seconds. Cook 2 minutes until the edges are crisp and lacy, scrape and flip, top with cheese, and cook 1 minute more.
  5. Stack two patties per bun with sauce, pickles, onion, lettuce and tomato.
