Buttermilk Fried Chicken Sandwiches

Juicy buttermilk-brined chicken thighs in a crackly seasoned crust, on toasted buns with pickles and spicy mayo. Better than the drive-through.

  • 4 boneless skinless chicken thighs
  • 1 1/2 cups buttermilk
  • 1 tbsp hot sauce
  • 1 1/2 cups flour
  • 1/2 cup cornstarch
  • 1 tbsp paprika
  • 1 tsp garlic powder
  • 1 tsp black pepper
  • 4 brioche buns
  • 1/2 cup mayonnaise
  • 1 tbsp sriracha
  • Dill pickle slices and shredded lettuce
  • Neutral oil for frying

Steps

  1. Soak the chicken in the buttermilk, hot sauce and 1 teaspoon salt for at least 1 hour.
  2. Mix the flour, cornstarch, paprika, garlic powder, pepper and 1 1/2 teaspoons salt. Drizzle in 2 tablespoons of the buttermilk and rub in for craggy bits.
  3. Dredge the chicken, pressing the coating on. Rest 5 minutes.
  4. Fry in 1 1/2 inches of 350°F oil, 5 to 6 minutes per side, until deep golden and 165°F inside. Drain on a rack.
  5. Mix the mayo and sriracha. Toast the buns and build with mayo, chicken, pickles and lettuce.
