Glazed Meatloaf with Mashed Potatoes

Tender beef-and-pork meatloaf with a sweet-tangy ketchup glaze, next to buttery mashed potatoes. Sunday dinner any night.

  • 1 1/2 lb ground beef
  • 1/2 lb ground pork
  • 1 onion, finely diced
  • 2 cloves garlic, minced
  • 3/4 cup panko
  • 1/2 cup milk
  • 2 eggs
  • 2 tbsp Worcestershire sauce
  • 1/2 cup ketchup
  • 2 tbsp brown sugar
  • 1 tbsp apple cider vinegar
  • 2 1/2 lb potatoes, peeled
  • 4 tbsp butter
  • 1/2 cup warm milk, for the potatoes

Steps

  1. Heat the oven to 375°F. Soften the onion in a little oil; cool slightly. Soak the panko in the milk.
  2. Mix the beef, pork, onion, garlic, soaked panko, eggs, Worcestershire, 1 1/2 teaspoons salt and pepper gently. Shape into a loaf on a lined sheet pan.
  3. Stir the ketchup, sugar and vinegar. Brush half over the loaf. Bake 45 minutes, brush with the rest, and bake 10 to 15 minutes more to 160°F.
  4. Boil the potatoes until tender, drain, and mash with butter, warm milk and salt.
  5. Rest the meatloaf 10 minutes before slicing.
