
Shrimp Scampi Linguine
Plump shrimp in a garlicky white wine butter sauce over linguine, finished with lemon and parsley. Restaurant flavor in twenty minutes.

- 1 lb large shrimp, peeled and deveined
- 12 oz linguine
- 5 cloves garlic, thinly sliced
- 1/2 cup dry white wine
- 4 tbsp butter
- 3 tbsp olive oil
- 1 lemon, zested and juiced
- 1/4 tsp red pepper flakes
- 1/3 cup fresh parsley, chopped
Steps
- Cook the linguine in salted water until al dente. Reserve 1 cup of the water and drain.
- Pat the shrimp dry and season with salt and pepper. Heat the oil in a large skillet over medium-high and sear the shrimp 1 minute per side. Remove to a plate.
- Lower the heat. Add 2 tablespoons butter, the garlic and pepper flakes; cook 1 minute until fragrant, not browned.
- Pour in the wine and simmer 2 minutes. Add the lemon juice and remaining butter, swirling into a glossy sauce.
- Return the shrimp and add the pasta with a splash of pasta water. Toss until coated and hot.
- Finish with lemon zest, parsley and black pepper.
