Ginger Beef and Broccoli Stir-Fry

Thin-sliced flank steak, velveted so it stays tender, tossed with broccoli in a gingery garlic sauce. Better than takeout and twice as fast.

Ingredients (12)

  • 1 lb flank steak, sliced thin against the grain
  • 1 tbsp cornstarch
  • 1 tbsp soy sauce, for the beef
  • 1 large head broccoli, cut into florets
  • 1/3 cup soy sauce (or tamari)
  • 2 tbsp oyster sauce
  • 1 tbsp brown sugar
  • 1 tbsp grated fresh ginger
  • 3 cloves garlic, minced
  • 1/2 cup beef broth
  • 2 tbsp neutral oil
  • Steamed rice for serving

Steps

  1. Toss the beef with the cornstarch and 1 tablespoon soy sauce; rest 10 minutes.
  2. Whisk the soy sauce, oyster sauce, brown sugar, ginger, garlic and broth.
  3. Heat a wok or large skillet until smoking. Sear the beef in a single layer 1 minute per side. Remove.
  4. Add the broccoli with a splash of water; cover 2 minutes to steam, then uncover and char slightly.
  5. Return the beef, pour in the sauce and toss 1 to 2 minutes until glossy and thickened.
  6. Serve over rice.
