
Ginger Beef and Broccoli Rice Bowls
Savory ground beef and crisp broccoli in a gingery sauce over rice; about 25 minutes.
Ingredients (10)
- 1.5 lb ground beef
- 1.5 lb broccoli florets
- 3 pouches, 8.8 oz each microwave brown rice
- 6 tbsp reduced-sodium soy sauce
- 1.5 tbsp honey
- 1.5 tbsp rice vinegar
- 1.5 tbsp grated fresh ginger
- 5 cloves garlic
- 1 tbsp cornstarch
- 1.5 tsp olive oil
Steps
- Mix soy sauce, honey, vinegar, grated ginger, minced garlic, cornstarch, and 1/2 cup water.
- Heat oil in a very large skillet; crumble and brown beef in batches for 6–8 minutes per batch, until it reaches 160°F. Spoon off excess fat.
- Add broccoli and 3/8 cup water; cover and steam 4–5 minutes. Stir in sauce and simmer 2–3 minutes until thick and broccoli is tender-crisp.
- Heat rice according to package instructions and divide among six bowls; top with beef and broccoli.
