Beef Burrito Bowls

Seasoned ground beef over cilantro-lime rice with black beans, charred corn, pico and a quick avocado crema. Everyone builds their own.

Ingredients (13)

  • 1 lb lean ground beef
  • 1 tbsp chili powder
  • 1 tsp ground cumin
  • 1 tsp smoked paprika
  • 1 1/2 cups long-grain rice
  • 2 limes
  • 1 (15 oz) can black beans, rinsed
  • 1 1/2 cups corn kernels
  • 1 cup pico de gallo
  • 1 avocado
  • 1/2 cup sour cream
  • 1 cup shredded cheddar
  • 1 handful cilantro, chopped

Steps

  1. Cook the rice. Fluff with the zest and juice of one lime and most of the cilantro.
  2. Brown the beef in a skillet over medium-high, breaking it up. Stir in the chili powder, cumin, paprika, 1 teaspoon salt and 1/4 cup water; simmer until saucy.
  3. Char the corn in a dry hot skillet 4 minutes until spotted brown. Warm the beans with a pinch of cumin.
  4. Blend or mash the avocado with the sour cream, the juice of the second lime and salt.
  5. Build bowls: rice, beef, beans, corn, pico, cheddar, a spoon of crema and cilantro.
