
Miso-Glazed Salmon with Sesame Greens

- 4 (6 oz) salmon fillets
- 3 tbsp white miso
- 2 tbsp mirin
- 1 tbsp honey or maple syrup
- 1 tbsp rice vinegar
- 1 tsp grated ginger
- 1 lb bok choy or spinach
- 2 cloves garlic, sliced
- 1 tbsp toasted sesame oil
- 1 tbsp sesame seeds
- Steamed rice for serving
Steps
- Whisk the miso, mirin, honey, vinegar and ginger. Coat the salmon and let it sit 10 minutes.
- Heat the broiler. Place the salmon skin-down on a lined sheet pan and broil 6 to 8 minutes until the glaze bubbles and browns at the edges and the fish flakes.
- Meanwhile heat the sesame oil in a skillet, cook the garlic 30 seconds, then the greens with a splash of water until just wilted. Season with a pinch of salt.
- Serve the salmon over rice with the greens and a scatter of sesame seeds.
