Lemongrass Pork Rice Bowls

Vietnamese-style caramelized pork with lemongrass and fish sauce over rice, with cucumber, herbs and a bright nuoc cham to pour over.

  • 1 1/2 lb pork shoulder or loin, thinly sliced
  • 2 stalks lemongrass, tender part minced
  • 3 cloves garlic, minced
  • 3 tbsp fish sauce
  • 2 tbsp brown sugar
  • 1 tbsp neutral oil
  • 1 1/2 cups jasmine rice
  • 1 cucumber, sliced
  • 1 cup shredded carrot
  • 1 handful each mint and cilantro
  • 1/4 cup chopped peanuts
  • For the sauce: 3 tbsp fish sauce, 3 tbsp lime juice, 2 tbsp sugar, 1/2 cup water, 1 chili, 1 clove garlic

Steps

  1. Marinate the pork with the lemongrass, garlic, fish sauce, sugar and oil for 20 minutes or overnight.
  2. Stir the sauce ingredients together until the sugar dissolves.
  3. Cook the rice.
  4. Sear the pork in a very hot skillet in batches until caramelized at the edges, about 2 minutes per side.
  5. Build bowls with rice, pork, cucumber, carrot, herbs and peanuts. Spoon the sauce over everything.
