
Crispy Sesame Tofu Bowls
Cornstarch-crisped tofu tossed in a sticky sesame-ginger glaze over rice with quick-pickled cucumbers and steamed broccoli. Vegan takeout at home.

- 2 (14 oz) blocks extra-firm tofu, pressed and cubed
- 3 tbsp cornstarch
- 1/4 cup soy sauce or tamari
- 3 tbsp maple syrup
- 2 tbsp rice vinegar
- 1 tbsp toasted sesame oil
- 1 tbsp grated ginger
- 3 cloves garlic, minced
- 1 head broccoli, cut into florets
- 1 cucumber, thinly sliced
- 1 1/2 cups jasmine rice
- 2 tbsp sesame seeds
- 3 tbsp neutral oil
Steps
- Toss the cucumber with 1 tablespoon vinegar and a pinch of salt and sugar. Cook the rice. Steam the broccoli 4 minutes.
- Toss the tofu with the cornstarch and a pinch of salt. Fry in the oil over medium-high, turning, until crisp and golden on all sides, about 10 minutes.
- Whisk the soy sauce, maple syrup, remaining vinegar, sesame oil, ginger and garlic. Pour over the tofu and toss 1 minute until glossy.
- Serve over rice with broccoli, cucumbers and sesame seeds.
