
Egg Roll in a Bowl
All the flavor of an egg roll, no wrapper: ground pork and cabbage stir-fried with ginger, garlic and sesame. Low-carb, gluten-free and done in 20.

- 1 lb ground pork
- 1 (14 oz) bag coleslaw mix or 6 cups shredded cabbage and carrot
- 4 cloves garlic, minced
- 1 tbsp grated ginger
- 3 tbsp soy sauce or tamari
- 1 tbsp rice vinegar
- 1 tsp toasted sesame oil
- 3 scallions, sliced
- 1 tbsp sesame seeds
- Sriracha for serving
Steps
- Brown the pork in a large skillet over medium-high, breaking it up, about 6 minutes.
- Add the garlic and ginger for 1 minute.
- Add the cabbage mix, soy sauce and vinegar. Toss 4 to 5 minutes until the cabbage wilts but keeps some crunch.
- Finish with sesame oil, scallions and sesame seeds. Serve with sriracha, over rice if you like.
