Ingredients (14)
- 1 lb fresh spinach (or 10 oz frozen)
- 12 oz paneer, cubed
- 1 onion, diced
- 3 cloves garlic
- 1 tbsp grated ginger
- 1 green chili
- 2 tomatoes, chopped
- 1 tsp ground cumin
- 1 tsp ground coriander
- 1/2 tsp turmeric
- 1/2 tsp garam masala
- 1/4 cup heavy cream
- 3 tbsp ghee or butter
- Naan for serving
Steps
- Blanch the spinach 1 minute, plunge into cold water, squeeze and blend to a smooth purée with the chili and a splash of water.
- Brown the paneer cubes in 1 tablespoon ghee until golden. Set aside.
- Cook the onion in the remaining ghee until soft. Add garlic, ginger, cumin, coriander and turmeric for 1 minute, then the tomatoes until broken down.
- Stir in the spinach purée and simmer 5 minutes. Season with salt.
- Fold in the paneer, cream and garam masala. Warm through and serve with naan.
