Lamb Kofta with Cucumber Yogurt

Spiced lamb skewers grilled or pan-seared, with a cooling cucumber-mint yogurt, warm flatbread and a chopped salad.

Ingredients (13)

  • 1 1/2 lb ground lamb
  • 1 small onion, grated and squeezed dry
  • 3 cloves garlic, minced
  • 1/3 cup fresh parsley, chopped
  • 2 tsp ground cumin
  • 2 tsp ground coriander
  • 1 tsp smoked paprika
  • 1/2 tsp cinnamon
  • 1 cup Greek yogurt
  • 1 cucumber, grated and squeezed
  • 2 tbsp fresh mint, chopped
  • 1 lemon
  • 4 flatbreads

Steps

  1. Mix the lamb with the onion, garlic, parsley, spices and 1 1/4 teaspoons salt. Form into 12 oval logs around skewers, or free-form. Chill 15 minutes.
  2. Stir the yogurt with the cucumber, mint, a squeeze of lemon and salt.
  3. Grill or sear the kofta over high heat 3 to 4 minutes per side until browned and just cooked through.
  4. Warm the flatbreads. Serve kofta with the yogurt, lemon wedges and a chopped tomato-cucumber salad.
