
Lamb Kofta with Cucumber Yogurt

- 1 1/2 lb ground lamb
- 1 small onion, grated and squeezed dry
- 3 cloves garlic, minced
- 1/3 cup fresh parsley, chopped
- 2 tsp ground cumin
- 2 tsp ground coriander
- 1 tsp smoked paprika
- 1/2 tsp cinnamon
- 1 cup Greek yogurt
- 1 cucumber, grated and squeezed
- 2 tbsp fresh mint, chopped
- 1 lemon
- 4 flatbreads
Steps
- Mix the lamb with the onion, garlic, parsley, spices and 1 1/4 teaspoons salt. Form into 12 oval logs around skewers, or free-form. Chill 15 minutes.
- Stir the yogurt with the cucumber, mint, a squeeze of lemon and salt.
- Grill or sear the kofta over high heat 3 to 4 minutes per side until browned and just cooked through.
- Warm the flatbreads. Serve kofta with the yogurt, lemon wedges and a chopped tomato-cucumber salad.
