Honey-Dijon Pork Tenderloin with Potatoes and Green Beans

  • 1.25 lb pork tenderloin
  • 1.25 lb baby potatoes
  • 12 oz green beans
  • 2 tbsp Dijon mustard
  • 1 tbsp honey
  • 2 tbsp olive oil
  • 1 tsp garlic powder
  • 3/4 tsp salt
  • 1/2 tsp black pepper

Steps

  1. Heat oven to 425°F. Quarter potatoes, toss with 1 tbsp oil and half the salt and pepper on a large rimmed sheet pan, and roast 15 minutes.
  2. Mix mustard, honey, and garlic powder. Rub pork with half the mixture. Toss trimmed beans with remaining oil, salt, and pepper.
  3. Stir potatoes and add pork and beans, leaving space around pork; use a second pan if crowded. Roast another 18–25 minutes, until pork reaches 145°F and potatoes are tender.
  4. Rest pork at least 3 minutes before slicing. Spread reserved clean glaze over sliced pork and serve with vegetables.
