Baja Fish Tacos with Lime Slaw

Crisp beer-battered white fish, crunchy lime cabbage slaw and a chipotle crema in warm corn tortillas. Taco night's greatest hit.

  • 1 1/2 lb cod or halibut, cut into strips
  • 1 cup all-purpose flour
  • 1 tsp baking powder
  • 1 cup cold beer or sparkling water
  • 3 cups shredded cabbage
  • 2 limes
  • 1/2 cup mayonnaise
  • 1 chipotle in adobo, minced
  • 12 corn tortillas
  • 1 handful cilantro
  • Neutral oil for frying

Steps

  1. Toss the cabbage with the juice of one lime, a pinch of salt and half the cilantro. Mix the mayo with the chipotle and juice of half a lime.
  2. Whisk the flour, baking powder and 1 teaspoon salt. Stir in the beer until just smooth.
  3. Heat 1 1/2 inches of oil to 365°F in a deep pot. Pat the fish dry and season.
  4. Dip fish in batter and fry in batches 3 to 4 minutes until golden and crisp. Drain on a rack and salt lightly.
  5. Warm the tortillas. Fill with fish, slaw, a drizzle of crema and a squeeze of lime.
