Coconut Red Lentil Dal

Red lentils cooked down with coconut milk, turmeric and a tempered spice oil poured over the top. Cheap, cozy and endlessly repeatable.

Ingredients (15)

  • 1 1/2 cups red lentils, rinsed
  • 1 (14 oz) can coconut milk
  • 3 cups water or vegetable broth
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 1 tbsp grated ginger
  • 1 tsp turmeric
  • 1 (14 oz) can diced tomatoes
  • 1 tsp cumin seeds
  • 1 tsp mustard seeds
  • 1/2 tsp red pepper flakes
  • 3 tbsp coconut oil
  • 1 lime
  • 1 handful cilantro
  • Rice or flatbread for serving

Steps

  1. Soften the onion in 1 tablespoon oil. Add garlic, ginger and turmeric for 1 minute.
  2. Add the lentils, tomatoes, coconut milk and water. Simmer 20 to 25 minutes, stirring occasionally, until the lentils collapse into a thick stew. Season with salt.
  3. Heat the remaining oil in a small pan. Add the cumin and mustard seeds and pepper flakes; when they sizzle and pop, pour the oil over the dal.
  4. Squeeze in lime juice and scatter cilantro. Serve with rice.
