Better-Than-Takeout Chicken Fried Rice

Day-old rice, soy-glazed chicken, eggs and peas hit a screaming-hot pan. Fifteen minutes, one wok, zero leftovers.

Ingredients (10)

  • 4 cups cooked rice, cold
  • 1 lb boneless skinless chicken thighs, diced
  • 3 eggs
  • 1 cup frozen peas and carrots
  • 3 scallions, sliced
  • 3 cloves garlic, minced
  • 3 tbsp soy sauce
  • 1 tbsp oyster sauce
  • 1 tsp toasted sesame oil
  • 3 tbsp neutral oil

Steps

  1. Season the chicken with salt. Cook in 1 tablespoon oil over high heat until browned and cooked through. Remove.
  2. Scramble the eggs in a little oil until just set; remove.
  3. Add the remaining oil, garlic and scallion whites for 30 seconds. Add the rice, pressing it flat so it sizzles. Let it sit 1 minute, then toss. Repeat twice.
  4. Add the peas and carrots, chicken and eggs. Pour soy and oyster sauce around the edge of the pan and toss until every grain is coated.
  5. Finish with sesame oil and scallion greens.
