
Chicken Tikka Masala

Ingredients (15)
- 2 lb boneless skinless chicken thighs, cut into chunks
- 1 cup plain yogurt
- 2 tbsp lemon juice
- 2 tbsp garam masala
- 1 tbsp ground cumin
- 1 tbsp paprika
- 1 tsp turmeric
- 1 onion, finely diced
- 4 cloves garlic, minced
- 1 tbsp grated ginger
- 1 (28 oz) can crushed tomatoes
- 1 cup heavy cream
- 3 tbsp butter or ghee
- 1 handful cilantro
- Basmati rice and naan for serving
Steps
- Mix the yogurt, lemon juice, half the garam masala, cumin, paprika, turmeric and 1 teaspoon salt. Coat the chicken and marinate at least 30 minutes.
- Spread the chicken on a lined sheet pan and broil 8 to 10 minutes until charred in spots.
- Melt the butter in a large pot. Cook the onion until golden, 8 minutes. Add garlic, ginger and remaining garam masala for 1 minute.
- Add the tomatoes and simmer 15 minutes until thick and deep red. Blend smooth if you like.
- Stir in the cream and the chicken with its juices. Simmer 10 minutes. Season with salt.
- Serve over basmati with naan and cilantro.
