Chicken Tikka Masala

Yogurt-marinated chicken charred under the broiler, then simmered in a creamy spiced tomato sauce. The one everyone orders, made at home.

  • 2 lb boneless skinless chicken thighs, cut into chunks
  • 1 cup plain yogurt
  • 2 tbsp lemon juice
  • 2 tbsp garam masala
  • 1 tbsp ground cumin
  • 1 tbsp paprika
  • 1 tsp turmeric
  • 1 onion, finely diced
  • 4 cloves garlic, minced
  • 1 tbsp grated ginger
  • 1 (28 oz) can crushed tomatoes
  • 1 cup heavy cream
  • 3 tbsp butter or ghee
  • 1 handful cilantro
  • Basmati rice and naan for serving

Steps

  1. Mix the yogurt, lemon juice, half the garam masala, cumin, paprika, turmeric and 1 teaspoon salt. Coat the chicken and marinate at least 30 minutes.
  2. Spread the chicken on a lined sheet pan and broil 8 to 10 minutes until charred in spots.
  3. Melt the butter in a large pot. Cook the onion until golden, 8 minutes. Add garlic, ginger and remaining garam masala for 1 minute.
  4. Add the tomatoes and simmer 15 minutes until thick and deep red. Blend smooth if you like.
  5. Stir in the cream and the chicken with its juices. Simmer 10 minutes. Season with salt.
  6. Serve over basmati with naan and cilantro.
